Here’s the thing about mashed potatoes: We’ve all been doing them wrong

Last night, I went with Megan and some friends to Bros. for their “Fresh (Hop) Giving” dinner, and while everything was very good (stuffed turkey breast, jalapeno corn bread, a flight of four fresh hop beers that included the Schell’s Stag Series Citra Pils that was good enough I was asking the waiter where in town I could buy it, etc.), my favorite thing was the Sweet Potato Casserole.
I never want mashed potatoes any other way. Well maybe a good garlic mash now and then, but other than that, this is how it’s got to be:
A big mess of sweet potatoes, mashed with what tasted like 17 pounds of butter and 2 gallons of cream, with caramelized pecans and crisp bacon, creating a overindulgent sweet/savory bed for the rest of the meal.
I could not have loved this more. Here’s hoping they’ll continue to offer this during the holiday season, or at least special order? Please?
